Tikka Masala

A popular Indian dish flavored with tomatoes garlic and with meat marinated in yogurt.

Meat and Marinade
 1 ½ lbs Chicken or Lamb
 ½ cup Plain Yogurt
Remaining Ingredients
 6 tbsp Tikka Paste
 1 tbsp Cooking Oil
 3 Onions (Chopped)
 1 cup Bell Peppers (Coarse chop)
 3 Garlic Cloves
 14 oz Tomatoes (Crushed)
 1 tbsp Hot Pepper Flakes
 1 tsp Cumin (Whole)
 1 tbsp Lemon Juice
 ½ cup Cilantro (Coarse chop - for garnish)
Cut and marinate meat

Cut the meat into 1 inch cubes. Mix 1/2 of the tikka paste and the yogurt into a bowl. Add the meat and let marinate for at least 20 Minutes, but no more than 2 hours to avoid over tenderizing.

Cook Vegetables and Spices

Heat the oil in a heavy pan and fry the onions until almost cooked, then and fry the peppers. Make a well in the center of the pan, and add a teaspoon of oil. Add the garlic, cumin, and hot pepper flakes, fry for one minute, then add the remaining tikka paste and fry for another minute. Add the crushed tomatoes, meat and ginger, bring to a boil and simmer for 15 Minutes.

When the meat is fully cooked, add in the lemon juice, and add salt to taste.

Garnish with cilantro and fresh yogurt. Serve on a bed of basmati rice or with flatbread (naan).
