Drunkards Noodles

Rice noodles cooked with basil, tomato, pepper and onion make up this quick and delicious dish!

Yields4 Servings

Ingredients

 14 oz Rice Noodles
Vegetables
 4 tbsp Cooking oil
 2 Onion (medium)
 2 Hot chilies (to taste)
 2 Bell Pepper (1" chop)
 2 Tomato
 2 tsp Garlic Cloves (Crushed)
Sauce
 6 tbsp Soy Sauce (plus more, or salt to taste)
 1 tsp Garlic Cloves (Crushed)
 2 tbsp Sugar
 30 Basil Leaves
 1 Lime or Lemon (juiced)
 3 Kaffir Lime Leaves (Optional)

Directions

Soak noodles and prep ingredients

Soak rice noodles for 15 to 60 minutes.
Prep all ingredients so they will be ready when you need them.

Heat oil in skillet over medium heat.
Sauté the onion for 4 minutes or until golden.
Add garlic and fry for 30 seconds.
Add bell pepper and tomatoes and simmer for 2-3 minutes.

Add noodles, sauce and serve

Add soaked noodles to skillet and cook for 3-4 minutes, or until almost cooked.

Add sauce mixture and cook an additional 1 minute.

Serve immediately.
